Colin Miller
Assistant General Manager and Bar Manager
Meet Colin, the multitasking maestro behind the scenes at Bricks & Barley. Otherwise known as our Assistant General Manager and Bar Manager!
Colin's journey with us started from the ground up, joining as a bartender and supervisor even before we officially opened.
With over 14 years of hospitality expertise in Niagara-on-the-Lake, Colin's roots run deep in our community. Born and raised in Niagara, he's got a passion for providing top-notch service and creating memorable experiences.
Off duty, Colin's proud to be involved in the hockey and sports community, with solid ties woven through his family and personal endeavors.
In the summer, you'll catch Colin sipping his signature barrel-aged gin concoction infused with honey and vanilla rye bitters. After a long shift, he unwinds with a double shot of Amaro and a crisp pilsner.
What we appreciate the most about Colin is his commitment to fostering a friendly work environment. Championing an open-door policy, he invites collaboration and teamwork.
Beyond Bricks & Barley, he keeps the connections alive with other local community members, ensuring our restaurant remains a dining destination and community hub.
Rachel Schalk
Chef De Cuisine
Meet Rachel, our head Chef and the creative force behind the delicious food at Bricks & Barley. With over three years under our roof and two years at the helm of our kitchen, Rachel brings a passion for local ingredients and a knack for crafting comfort foods with a twist.
Born and raised in Niagara, Rachel calls St. Catharines home. Her journey through the culinary world started right here at Niagara College, where she honed her skills in Culinary Management and Baking and Pastry Arts. On top of that, she's a Red Seal Chef and even passes on her culinary wisdom as a professor at Niagara College.
Rachel's culinary journey has taken her from local eateries to the serene landscapes of Muskoka, where she fine-tuned her craft at a private golf club. Needless to say, we're stoked that her travels brought her back to Niagara!
When she's not whipping up new dishes in the kitchen, Rachel loves indulging in her favorite comfort foods. Whether it's pizza and a cold beer or a bowl of pho, it's gotta be followed by ice cream.
Beyond the kitchen, Rachel loves spending quality time with loved ones and enjoying sports with her daughter. You can often find her unwinding with LEGO masterpieces, diving into a good book, or playing video games.

Trevor Sanders
Pastry Chef / Head of the Pastry Department
Meet Trevor, our Pastry Chef. From a young age, Trevor's mom, aunt, and nana ignited his passion for baking, inspiring him to pursue this career.
In his role, Trevor loves his creative freedom to bring his ideas to life and infuses each creation with his personal touch. Trevor makes all our baked goods himself! That said, his favorite things to make are fresh bread and whipping up decadent cheesecakes.
As a personal goal, Trevor is working towards mastering baking the perfect croissant. Despite how tricky lamination can be, he's determined to hone his skills in this delicate craft.
A graduate of Niagara College's Baking and Pastry Arts program, Trevor brings a wealth of knowledge and expertise to our pastry department. Beyond the kitchen, Trevor's passions extend to the world of modified cars.
With Trevor leading the charge, our pastry offerings are not just desserts – they're delicious bites crafted with care and dedication.
